Low Carb Parmesan and Herb Crackers
I'm not a fan of store bought low carb crackers. They are normally hard as a rock or tasteless! I created this recipe using my low carb flour mix and added some flax and wheat germ. There is only 40 carbs in this entire recipe. It made about 50 crackers that were 1.5 inches square, that's about 0.8 carbs each, pretty good! I'm working on a cheddar cheese cracker recipe and I will post that one soon too. You can add whatever spices you like to this recipe. These are tender-crisp and very delicious!

Low Carb Banana Muffins
I love banana muffins, but bananas aren't exactly on the low carb food list. I improvised my favorite banana bread recipe to create these moist, delicious muffins. I used my low carb baking mix for this recipe and only one small banana along with imitation banana extract. They are wonderful hot out of the oven with butter! And only 6.3 carbs each. You could reduce the carb count by using a different flour/meal combination.
Sugar-Free Chocolate for Cookies and Candy
This is my version of sugar-free chocolate. It is easy to make yourself. Buying it online gets expensive! This takes only a few minutes to prepare.

- 2 oz unsweetened baking chocolate (chopped)
- 2 tbls heavy cream
- 1/4 cup sugar substitute +/- (powdered works best)

I had an anonymous reader question my carb count for almond flour. That got me doing some research. I found many different conflicting numbers online. I chose to go with the highest carb count I found to be on the safe side. Thanks again for all of your comments and suggestions.
I am also working on a gluten-free version of my low carb flour mix since I can no longer eat gluten. Bummer!
