Low Carb Artichoke Spinach Dip



This is the perfect appetizer for when you want to Wow your guests. It's so rich and creamy you'll forget that it's low carb. You can use fresh cooked spinach or frozen. Serve this with low carb chips or fresh veggies.



Ingredients:
  • 6 oz of cream cheese
  • 1/2 cup plain Greek yogurt
  • 1 -14 oz can of artichoke hearts, drained
  • 1/2 cup frozen spinach thawed, drained and chopped
  • 1/4 cup parmesan cheese
  • 3/4 cup shredded pepper jack cheese 
  • 2 cloves garlic chopped
  • salt and pepper to taste

Soften cream cheese in the microwave for 30 seconds in a medium sized microwave safe bowl. Add the yogurt, garlic, salt, pepper and parmesan cheese, then stir until well blended. Stir in the spinach, artichokes and about 1/2 cup of the pepper jack cheese. Put the dip into an oven-safe dish and sprinkle remaining 1/4 cup of the cheese on top. Bake at 350 for approximately 25-30 minutes. Enjoy!
