I love comfort foods like soups and stews, especially in the Fall and Winter months. They always seen to warm the soul. One of my favorites is a simple chicken noodle. I use Dreamfields Rotini pasta in this dish, but feel free to use any type of low carb pasta that you have on hand. Bone-in chicken will make a better tasting soup.
Ingredients:
- 3 quarts fresh water
- 3 lbs bone-in chicken (I prefer legs)
- 2 cups chopped celery
- 1 cup chopped onion
- 1 teaspoon dried thyme
- 1/2 teaspoon dried sage
- salt and pepper to taste
- 2 cubes chicken bouillon
- 1 can cream of chicken soup
- 1/2 lb Dreamfields Rotini pasta
In a large stock pot, bring water to a boil and add chicken pieces. Cook about 30-45 minutes until chicken is done and falling off of the bone. Remove chicken and set aside to cool, taking care to remove any bones from the pot. Add the bouillon, celery, onion, and spices. Bring to a boil and add pasta, cook according to package directions. In the mean time, remove the chicken from the bone. When pasta is done, add the chicken and the cream of chicken soup. Heat through and serve hot.
