This recipe calls for beans, YES beans! I used small red beans (not kidneys) which are very high in fiber, having only has 7 net carbs per1/2 cup serving. Grilled sirloin and smokey chipotles gives this dish a very rich hearty flavor, hamburger just doesn't do it justice. A perfect meal for a cold rainy day. This recipe makes about 6 main dish servings, having only 8.5 carbs per serving.
Ingredients:
- 2.5-3 lbs of sirloin
- 1/2 lb cooked and drained small red beans (2 cups)
- 2 tbls olive oil or butter
- 3/4 cup diced celery
- 1/2 cup sliced green onoin
- 1/2 cup diced green pepper
- 4 diced plum tomatoes
- 2 cloves minced garlic
- 3 chipotle peppers in adobo sauce diced
- 3 tbls chili powder
- 1 tsp cumin
- 1 tsp dried oregano
- 2 tbls dried cilantro or 1/4 cup fresh
- 1 beef bouillon cube
- 1 cup water
- salt and pepper to taste
- cheddar cheese and sour cream for garnish
Cook beans according to package directions, drain, rinse and set aside. Sprinkle sirloin liberally with meat tenderizer and grill for 5 minutes each side. Remove from grill, cover with foil and let rest 5 minutes. Cut sirloin into bite sized pieces and set aside. In a large pot or dutch over, over medium high heat, add oil or butter, green peppers and celery. Saute for 5 minutes or until tender crisp. Stir in the beef bouillon, water, diced tomatoes, green onion, chipotle peppers, garlic and spices. Cover and simmer 30 minutes, then add beans and sirloin, heat through. Garnish with cheddar cheese and sour cream. This dish is sooo good!
